O Hanukkah, O Hanukkah…A Delish Potato Dish

Many of you might not know this, but we are equal opportunists when it comes to celebrating holidays in our household.  I celebrate Christmas, Floyd celebrates Hanukkah, and together we celebrate it all!  Although to be fair, I’m still very new at it and not nearly as advanced at kitchen skills like brisket and challah as I’d like to one day be. So, when my girl, Di (short for Diane) asked if I wanted to do a joint Hanukkah dinner, I thought it would be the perfect way to show Floyd some holiday cheer, as well as learn from someone more experienced than I.

We did a simple dinner of roast chicken with veggies, and while that was cooking in the oven, I received a first class lesson in latke making.  It wasn’t too hard and they turned out delicious! I mean who doesn’t adore fried potatoes with apple sauce and sour cream?  You’d have to be crazy!

What was even better was feeling like we took the time to share in the holiday with good friends.  So, while I’m pretty confident I could make latkes on my own, next year I may just play dumb so we can do it all over again.

Potato Latkes
(This recipe is very close to the one we used)

Ingredients

  • 3 large potatoes, peeled and shredded
  • 1 small onion, shredded
  • 3 eggs
  • 1 teaspoon salt
  • 2 tablespoons all-purpose flour, or as needed
  • 1/2 cup vegetable oil

Directions

  1. Place the potatoes and onion into a bowl, and stir in eggs, salt, and flour as needed to make the mixture hold together. With wet hands, scoop up about 1/3 cup of the mixture per patty, and form into flat round or oval shapes.
  2. Heat the vegetable oil in a large skillet over medium heat until it shimmers, and gently place the patties into the hot oil. Fry until the bottoms are golden brown and crisp, 5 to 8 minutes, then flip with a spatula and fry the other side until golden.
  3. Line a colander or strainer with 2 paper towels, and drain the cooked latkes in the colander. Serve hot.
