‘Tis the Season Link Up: Greek Salad Skewers

Hi there, it’s Jackie Fo and I’m back to share my entertaining recipes, tips and tricks…

Just because the holidays are over doesn’t mean you have to stop entertaining! Super Bowl Sunday will be here in just a couple weeks. And maybe you’re looking for a healthier option to make up for all those cookies and sweets you had over the last month or so? Plus, Super Bowl fare isn’t typically the healthiest, so if you can throw in some lighter options, that would be great right?

Enter my Greek salad skewers…They’re adorable in presentation and a fresh, healthy option to start off the new year! This no-cook appetizer recipe requires only assembly and doesn’t sacrifice flavor even though it’s on the lighter side!

Greek Salad Skewers
{Makes about 30 toothpick skewers}

Ingredients:

1 pink cherry or grape tomatoes
1 cucumber
1 block feta cheese
about 30 Kalamata olives
Red Wine Vinegar
Oregano
30 toothpicks

How to make it:

1. Start by washing your vegetables.

2. Dice both the block of feta cheese and the cucumber into pretty large square blocks.

3. Thread your pieces onto a toothpick, being careful not to break the feta cheese. Be careful with Kalamata olives as they have pits in them, you can omit the olives or use olives without a pit.

4. Before serving, drizzle red wine vinegar and sprinkle oregano over the skewers. These can be served alone, with a dipping sauce or using marinated feta cheese. Enjoy!
