These Oreo Cheesecake Bites are soooo good you guys! Sure its January and I know I should be focusing on healthy salads and smoothies, and I promise I truly am, but these little Oreo cheesecake bites are calling my name. A delicious cookie crust with a creamy cheesecake layer are the ideal combination for this dessert lover.
They are the perfect two bite dessert and are great for entertaining. Trust me, no one will be sad when you bring them to the party!
So lets get down to the business of baking!
(Makes 2 dozen)
12 Oreo cookies
1.5 Tbsp unsalted butter
12oz cream cheese, softened (I used 1 1/2 boxes of reduced fat cream cheese)
1/2 cup of sugar
1 tsp. vanilla
1 egg (room temperature is best)
3-5 Oreos broken into small pieces (I place them in a plastic bag and then crush a bit)
Garnish: Whip cream and mini Oreo cookies if desired.
Prep: To get started preheat your oven to 350 degrees and lightly grease mini cheesecake pan(s).
Crust: Blend cookies until only small crumbs. Transfer to bowl and mix in butter. Using a spoon or small scoop (I used a coffee scoop) make a layer of cookie crumbs in each section. Press each one firmly down. Bake for 5 minutes.
Filling: In a mixer blend the cream cheese and sugar. Next add the vanilla and egg. Finally gently stir in the crushed cookie pieces until they are just mixed. Scoop the filling onto each cookie crust leaving about a third of the cup space for the cheesecake to rise. Bake for about 15 minutes and let cool completely before transferring to the fridge.
Just before serving add a dollop of whip cream and a mini Oreo for garnish. Enjoy your Oreo cheesecake bites and share them only if you want to, ha!
