Slow Cooker Sweet and Sour Meatballs

With all this nasty weather that’s been blanketing much of country, I have to admit that I’ve been in the mood for comfort food. There is nothing quite like cozying up at home with my family and enjoying some quality time over a hearty meal. And it doesn’t get much heartier than meatballs. Am I right? These slow cooker sweet and sour meatballs would make for a perfect winter meal starter or even delicious Super Bowl party fare. The big game is barely a week away after all!

Ingredients:
1/2 cup brown sugar, loosely packed
1/2 cup rice vinegar
1 tablespoon soy sauce
1 tablespoon cornstarch, dissolved in 2 tablespoons water
1-2 cups fresh pineapple chunks (or use canned)
2 pounds frozen meatballs, thawed (32 oz)

Directions:

1. In a saucepan, mix brown sugar, vinegar, soy sauce and corn starch. Heat over medium heat and whisk constantly. Bring to a boil, and continue to whisk.

2. Continue to boil and whisk until the mixture changes into a thick, deep, transparent brown color. The color will go from a light brown to dark brown and thicken when ready.

3 Remove from heat. Add pineapple and stir well.

4. Place meatballs in slow cooker and pour sauce over them. Mix well and heat on high for 2-4 hours or until warmed through or low for 4-6 hours. Stir occasionally to prevent burning.
