Chicken Pesto Panini
Week 1: Paninis!
I decided to kick off the three week challenge from my previous post with the panini maker. It was not only the largest item, but also looked the easiest. What can I say. I’m a slacker.
With the panini maker manual in hand and this bad boy fired up and ready to go, I did a quick search and decided to make Chicken Pesto Paninis. It ended up being really easy and soooo delicious. Who knew you just had to plug it in and wait for the “Ready” light? I should have done that months ago! These were tasty enough to serve for a company lunch, but easy enough to treat yourself. And when I say easy, I mean it. I used store bought pesto and a rotisserie chicken. You can’t get easier than that!
Chicken Pesto Panini – For the panini below, I used focaccia bread sliced in half. I then spread each side with pesto and layered on rotisserie chicken, green pepper, tomato, Monterrey jack cheese and red onion.
Now that I’ve tried it out, I can’t imagine life without my ol’ panini maker. I know its going to be a staple in our household given how fast Floyd scarfed his down. And you can put leftover items to good use with countless sandwich options. Score!
