My kids are pretty picky, especially when it comes to meat. For some reason they are easier on side dishes than they are the main event. They tend to choose foods that aren’t overly fussy and that they recognize. Which is why this easy oven fried chicken is one that even kids love. It is truly delicious and adds a lot of flavor to another night of chicken. Yet it is simple enough to make for a weeknight meal and requires very little clean up. It’s a total win!
This easy oven fried chicken is such a win that I tend to double-up on it when I make it. In the summer I pair it with corn-on-the-cob and watermelon slices. The next day Floyd and I slice it up and have it over a salad while the kids eat it again. Don’t you love having a night where dinner is already cooked and ready to go?! I love spending time in the kitchen, but on my own time and cramming it in after a full day while kids are underfoot and begging for snacks is not my idea of a leisurely cooking experience. Ha! Thank goodness meals like this can stretch into two nights of happy eaters! Enjoy!
Easy Oven Fried Chicken
Nonstick cooking spray, for spraying the rack and chicken
2 1/4 cups broken bagel chips or Melba toast
1 1/3 cups Rice Krispies cereal
1 tsp canola oil
2 tsp. kosher salt
1/2 tsp. cayenne pepper
1/2 tsp. paprika
1/2 tsp. black pepper
1/2 cup mayonnaise
1 tbsp. Dijon mustard
1 package, boneless skinless chicken tenders or 4 bone-in, skinless chicken pieces
Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray with cooking spray.
Put the bagel chips and cereal into a food processor and pulse into crumbs. Transfer the crumbs into a gallon-size plastic bag.
Add the oil, salt, cayenne, paprika and ground pepper and shake bag to mix.
Whisk the mayonnaise and Dijon mustard together in a medium shallow bowl.
Coat the chicken with the mayonnaise mixture evenly. I tend to use a spoon or brush to coat but sometimes fingers work best.
Drop the chicken into the plastic bag, seal and shake until each piece is evenly coated. Place the coated pieces on the baking sheet. Spray the chicken pieces with cooking spray.
Bake approximately 25-35 minutes (the tenders take less time to cook through) until the coating looks crispy and the meat thermometer reads 160 degrees.
Transfer to a platter and enjoy!
