Heart Cookie Sandwiches: Mother’s Day Dessert Recipe

I seem to be doing nothing but baking lately. What can I see? It makes me happy. And I do believe heart cookie sandwiches are another goody that will lift my spirits! Plus, with Mother’s Day coming up, I thought it would be the perfect time to whip up some tasty tidbits for my own mama. I’m sure the hubs and my kiddos have something special up their sleeves for me, but I always make sure I treat my own mother for everything she’s done for me!

I wouldn’t be the mommy I am today without her love and guidance! And what better way to say I love you on Mother’s Day than with heart cookie sandwiches? Actually, you could say I love you with heart shaped cookies to anyone, ANY time of year! But since it’s Mother’s Day soon, let’s focus on that for now. I’m a sucker for homemade gifts, especially the edible kind!

Ingredients:

cup (1) butter, softened to room temperature
cup (1) granulated sugar
tsp.(1) vanilla extract
egg (1)
cup (3) flour
tsp.(3) baking powder

strawberry frosting
sprinkles
heart cookie cutter
disposable piping bag
round frosting tip

Directions:

Preheat your oven to 350 degrees.
Using a hand mixer or stand mixer, whip the softened butter and sugar until creamy, about 2-3 minutes.
Add the vanilla extract and egg and continue to mix.
Sift in the 3 cups of flour and baking powder.
Finish mixing with your hands as the mixture will be stiff.

Divide the dough into 3-4 smaller batches.
Use a rolling pin to roll the dough onto a lightly floured surface to a 1/4″ thickness.
Use the heart shaped cookie cutters to cut out heart shaped cookies. Cut out an even amount as you’re making sandwiches that will require 2 cookies.

Place the cookies on an ungreased cookie sheet about 2″ a part.
Put the cookie sheet in the oven.
Bake for 7-9 minutes and let cool completely.

Attach the frosting tip to the disposable piping bag and fill with the  frosting.
Gently frost the edges of the bottom of one heart shaped cookie.
Then place another heart shaped cookie bottom side down on the frosting so it creates a cookie sandwich.
Pour the sprinkles into a small dish and gently press the sides of the cookie sandwich into the sprinkles.
Repeat this process with all the cookies.

Yield: 12 (depending on cookie cutter size)

These heart cookie sandwiches make the cutest gift for the sweets loving person in your love! We love to serve them up for Valentine's Day, Mother's Day, you name it!

Total Time 29 minutes
