Top of the mornin’ to ya! We’re here with a fun St. Patrick’s Day treat, mini cookie sandwiches, that’s easy and sure to be loved by both little ones and their parents alike! In fact, when I found these mini chocolate chip cookies at the grocery store the other day, I knew I had to use them for something special.
By adding a little pre-made frosting and some festive sprinkles, you’ve got a yummy dessert that your kids will love and can even help you make! Getting kiddos in the kitchen can be such a great family friendly activity.
We do it whenever we can! And you could, of course, go the homemade route with this idea, but if you’re short on time like the busy moms at Take Time for Style so often are, the sort of homemade route is the way to go. Haha!
All you need is a bag of mini chocolate chip cookies, vanilla frosting and green sprinkles. Start by pulling out two cookies and put a generous dollop of frosting right in the middle. Top it with another cookie, and roll gently through a pile of sprinkles you’ve put on a plate.
That’s it! These tiny sweets are perfect for serving at a party or for simply making with your kiddos as a special St. Patrick’s Day treat.
St. Patrick’s Day Cookie Sandwiches Recipe
Ingredients:
Bag of Mini Chips Ahoy
Container of Vanilla Frosting
Green sprinkles
Directions (makes about 20 mini cookie sandwiches):
Like I mentioned, all you have to do to make this St. Patrick’s Day treat is place a healthy amount of frosting between the two cookies and roll the cookie sandwich gently through your sprinkles. Easy peasy! It’s so easy, in fact, I’m not sure it qualifies as a “recipe,” bwah!
