Roasted Cauliflower Soup 

After the holidays, the gray, cold days seem to hit a bit more in January than they did with all the festivities of December.  For me, yummy soups are the perfect anecdote! One of my all time favorites is Roasted Cauliflower Soup. 

I love roasted cauliflower and use it a million ways.  It’s so easy, versatile and just delicious.  Even people who think they don’t like cauliflower, love this.  It was actually created one afternoon by me looking through my leftovers (the best ingredients for soup!) and realizing I had some cauliflower.  Adding a few simple items was all that was necessary for creating a delicious roasted cauliflower soup!

Here’s the basic recipe:

Ingredients: 

1 Large Head of Cauliflower

1/2 Onion

10 Small Red and Yellow Peppers

3 cloves garlic

Olive Oil

Vegetable or Chicken Broth (Homemade or Carton) About 1 quart

Salt and Pepper

Directions: 

For roasting the cauliflower, toss with generous amount of olive oil, salt and pepper.  Roast for about 20 minutes in a 400 degree oven until browned and tender.  Set aside.

Meanwhile, heat more olive oil in soup pot, add onion, peppers, garlic, salt and pepper and saute until just tender. Add broth and simmer. Season with additional salt and pepper, to taste.

Add roasted cauliflower and continue simmering for about 15-20 minutes. Using an immersion blender (regular blender, if you don’t have one, but the immersion is so much easier!) blend until a fairly smooth consistency, but not to a puree.  You want a hearty, filling soup!  Taste and adjust seasoning to taste.

This soup is delicious just like this. But, you can add all sorts of goodies to enhance!  Today, I had some creme fresh and chives, and they make perfect toppings for the soup (as well as a drizzle of Sriracha – my fave!)

As for the cauliflower seasoning, you can change this up, as well.  I often add curry to the cauliflower before roasting – yum!!  Just add your favorite seasoning to the salt, pepper and olive oil and create your favorite taste sensation.

 

Toppings can include croutons for crunch, bacon for a bit of decadence….you get the idea.  Have fun with it!  What toppings make sense to you?
