Super Easy Roasted Potatoes
Things are beyond busy for me right now. With two weeks of traveling headed my way, I’m also trying to also eat at home since I know I have many dinners out ahead. These roasted potatoes are always a huge hit and take little effort. A great side for almost any meal!
Ingredients: Potatoes (I typically use fingerlings or a mix of whatever’s on hand), olive oil, salt, pepper, parsley
Directions: Preheat oven to 425 degrees. Cut potatoes up into bite sized pieces. Place in roasting pan or baking sheet with a lip. Drizzle in olive oil and toss so potatoes are coated. Sprinkle with salt, pepper and parsley to taste. Bake for 25 minutes, gently toss and bake another 25 min until slightly crispy. Scarf down!
