One of our favorite summertime treats are in season. That’s right, it’s cherry time! Both Kristin and I love cherries so much that we can just sit there and gorge on the delicious fruit! I love making a bowl for myself and settling in for some late night TV. Cooking with cherries is also fun. My three-year-old Max is starting to get in the kitchen with me and this Chocolate Chip Cherry Bars Recipe was the perfect dessert to have him stir and mix. These bars are really quick and easy to make so having a toddler helper was no problem. Then while they were baking we played a few games and before we knew it they were ready for tasting. Yum! Chocolate Chip Cherry Bars Recipe
Gooey and delicious, these chocolate chip cherry bars make a wonderful dessert using this favorite summertime fruit!
- 1/2 cup butter
- 1 cup light brown sugar
- 1 egg
- 2 tsp. vanilla extract
- 1 cup all-purpose flour
- pinch of salt
- 3/4 cup semi-sweet chocolate chips
- 1 cup of cherries quartered
- Preheat oven to 350F.
- Line an 8x8 glass pan with aluminum foil and spray it with Pam.
- Melt the butter in the microwave.
- In a large bowl, mix together the melted butter and brown sugar.
- Add the egg and vanilla extract and stir.
- Add the flour and salt. Stir until just combined making sure not to over mix them.
- Next, add in the chocolate chips and cherries, folding them in.
- Pour batter into pan, spreading it down lightly with a spatula.
- Bake for 28 minutes or until your desired firmness. If cutting into nice bars, allow to cool so that they harden a bit first. Enjoy!
If you love cherries but feel confused how to eat them easily, I suggest buying an inexpensive pitter. I’ve linked to two below. I often just pop them out and then spit out the seeds when I’m alone (I told you I eat a lot of them!) but it isn’t the most ladylike around company and for my young children it’s much safer to pitt and cut the cherries in half. A cherry pitter is a fast way to do several at once and I highly recommend it. With cherries being one of the freshest produce items in the aisle, our pitter is getting a LOT of use right now!
A few cherry facts for all my fellow fruit lovers out there. I never realized just how amazing the cherries from the Northwest area of the United States are. If you like sweet cherries then chances are this is where they are coming from. And they are so healthy for you! According to the USDA, eating cherries can help prevent chronic inflammatory diseases such as cardiovascular disease, diabetes, arthritis and cancer. These superfruits also contain melatonin, which may increase one’s quality of sleep and reduce jetlag. No wonder I slept so well last night, ha!
