Easy Valentine Wafer Cookies

We’re well into February now, so I think it’s appropriate to continue on with our Valentine’s Day love fest with another tasty, yet simple recipe, Valentine Wafer Cookies. I’m using the term “recipe” lightly, by the way, but I digress…Bwah! There’s no reason you can’t whip up a super cute V-day treat with very little time spent in the kitchen! Hey, we’re busy right?

But when a holiday is all about the heart, we can’t help but want to celebrate it as much as possible even if we are time crunched. Don’t get me wrong. I don’t mind baking the day away when I have the time, but I simple don’t right now. That being said, as much as we’re all about spending some serious time in the kitchen baking up delicious Valentine’s Day ready treats, I’m busy with a capital B! And I know I’m not alone.

On that note, I always try to have a few go-to treat ideas on hand that I can turn to when I’m short on time. And let’s face it, we’re moms. We’re time challenged a LOT right? Luckily, these Valentine wafer cookies are the epitome of a quick and easy treat. You can whip them up in no time as a special little surprise for your family or even for your kiddo to take to the classroom!

Me…You just find me enjoying one or two with a Hallmark movie and a cuppa coffee. I’ve been hitting the pavement hard trying to get my knees adjusted to running again. So, I think I’ve earned some cookies. Just sayin’.

Easy Valentine Candy Dipped Cookies



24 Strawberry Wafer Cookies
½ cup Red Candy Melts/Discs
½ cup White Chocolate Melts/Discs
Sprinkles, Colored Sugar, Candy Hearts

1. Take your red candy discs and put them in a microwave safe bowl. Microwave for 30 seconds, then stir. Continue to do this until the discs are all melted.  Repeat the process with the white candy discs.

2. Dip the end of the wafer cookies in either the red or white chocolate. Lay them on a parchment lined cookie sheet.

3. Add sprinkles and/or colored sugars before they dry.

7. Let the dipped wafer cookies dry for about 10-15 minutes.

8. Your Valentine wafer cookies are now ready to serve or store in an airtight container. Enjoy!
