I’ve gone and done it. I’ve joined the popsicle craze. I mean full blown joined the dark side, get ready to see lots of pretty popsicle pics from this point on. They are such a fun way to cool down on a hot summer day and totally delicious which means, even as trendy as they are, they are hard not to just fall in love with.
Making my own popsicles was so easy and I love knowing that when you freeze them yourself you know without doubt what is going into your body.
First on my list are these pineapple popsicles. I had some extra pineapple juice that was going to go unused so I thought, why not?! I actually made two versions. One that was spiked with rum for the adults and the others that just used straight pineapple juice for the kiddos. For the kids version, I simply poured the pineapple juice into the molds and then added a few chunks of pineapple to each to really make it feel like a light treat.
For the adults version I added two ounces of coconut rum to the juice to make four popsicles. Once mixed I also just poured the mixture into the molds and added a few peices of pineapple to each.
What a refreshing treat! Both the husband and Jake loved them. I even let the baby have a little taste of the unspiked version. It was a simple hit and we can’t wait to make more with our favorite juices.
