Beef Sliders with Shredded Carrot

Some nights it can be hard to come up with something that works for everyone around the dinner table. So, when a friend made sliders and added veggies in, I was pleasantly surprised to watch as all the kids wolfed down the little burgers. Of course I had to try it for myself and make these grilled beef burgers with shredded carrot. Once again they were a huge hit. The great thing about this recipe is it can easily be altered to fit whatever you have on hand in your veggie drawer. I used carrots, but diced peppers, mushrooms or zucchini would also work. You can grill them out like I did, or cook them right on your stovetop. Whatever is easiest and works for you!

Beef Sliders with Carrot

Here’s how I made these little beef sliders.

Ingredients:
1.25 lbs lean ground beef (Makes 8-10 sliders)
2 good sized carrots shredded (I used a box grater)
1 egg
1/2 cup bread crumbs
Salt and Pepper to taste
Slider buns
Cheese, tomato and other burger toppings

Directions:
1. Preheat grill.
2. Mix together in bowl the beef, carrots, egg, bread crumbs, salt and pepper and shape into small size patties. Sprinkle patties with a little additional salt and pepper.
3. Grill about 3 minutes per side, flipping only once.
4. Let rest for a few minutes once off the grill. Place on bun, top with cheese and other toppings, enjoy!

This was a great weeknight meal and we even had a few leftovers for the next day. I love when lunch is a no brainer, ha! Tell me lovelies, what veggies would you put in your sliders?

  1. I have never thought about adding in carrots to hamburgers. However, this is a creative way to ensure that the boys are getting their veggies.
