Midweek Meals

Coming up with simple midweek meals can seem daunting at times. Yesterday, I was trying to think of something once again and went searching in the fridge and pantry to see what was available. Yay, I found ingredients to create one of my all time easy options. Flexible enough to dress up for the parents and keep kid friendly, as well.

Trader Joe’s has wonderful chicken breasts that are individually packaged in one large bag that I can keep in the freezer to grab for just this occasion. They can be defrosted in minutes by placing the sealed pieces in a large bowl of cold water and are ready to use ASAP! I always seem to have some dijon mustard around and panko or bread crumbs in the pantry. Yea, basically that’s it.

I salt and pepper them liberally and then coat with the mustard, roll in the breadcrumbs, place on a cookie sheet and drizzle with a tad of olive oil. Into an oven set for 375 degrees and cook for about 30 minutes. Squeeze with a little fresh lemon juice when they are done and I guarantee better than most fried chicken you have had! Seriously!

For the kids, I cut the chicken into in strips, add some ranch dip and baby carrots, broccoli and cauliflower to the dish and I have a home run! For my grown-up version, I keep them whole and toss a bunch of arugula with some salt and pepper, olive oil, fresh lemon juice and fresh Parmesan and place on top of the chicken. Healthy, yummy, and pretty. This feels like I’ve created a little bistro treat in no time. I add a glass of wine and our midweek meals are looking pretty good!

Midweek Meals Ingredients
Recipe for Chicken
4 Boneless Chicken Breasts (Use the Trader Joe’s individually packaged natural breasts)
Dijon Mustard
Panko or Breadcrumbs (both work great!)
Salt and Pepper
Olive Oil
Lemon Juice

Directions: Salt and Pepper breasts and coat with mustard, then dip in breadcrumbs. Drizzle with Olive oil and bake for about 30 minutes in 375 degree oven. While hot, squeeze fresh lemon juice over the breasts.
Kids Meal
For Arugula Salad
Bunch of Arugula
Olive Oil
Lemon Juice
Salt and Pepper
Freshly Grated Parmesan

Directions: Drizzle olive oil, add fresh squeezed lemon juice, salt and pepper to taste and grate some Parmesan. Toss and place on top of warmed chicken breast.

Trust me on this one. These are ideal ingredients to keep on hand and you will be thrilled on that midweek eve when you are searching for something easy, delicious and healthy. This is a winner!
