I’m the kind of girl who loves holidays so much as soon as one is over, I’m in hard core planning mode for the next one. Once January hits, for instance, I’m all about Valentine’s Day! Now I know not everyone is quite ready for all those bows and arrows and hearts quite yet, but that doesn’t mean I can’t sneak in some Valentine’s(ish) goodies a bit early…like a delicious cookies recipe!
I’m all for anything pink ANY time of year…So, these strawberry and vanilla cream cookies are right up my alley! And there up my little girl’s alley too for that matter. In fact, Santa brought her a tea cart and tea set for Christmas, so you can imagine the tea party mania that’s going on in our house right now. I do believe these pretty in pink cookies are just perfect for one of them. Plus, they’re the Pantone color of the year…which this fashion fanatic appreciates. Haha!
1 box of Strawberry Cake Mix
1 teaspoon Baking Powder
2/3 cups Vegetable Oil
1 teaspoon Vanilla
1 cup of Vanilla White Chocolate Chips
In a bowl, mix together the dry ingredients (cake mix and baking powder). Add in the wet ingredients (eggs, vegetable oil, and vanilla). Fold in the chocolate chips last.
Using a small cookie scoop, scoop the batter onto a greased cookie sheet (or a cookie sheet covered in parchment paper). Bake at 350 degrees for 10 minutes or until the cookies barely begin to brown on the bottom.
Makes about 30 cookies
