5 Minute Strawberry Shortcake

final2 (3)I love a good dessert. Growing up we had a sweet treat after almost every dinner. So its no wonder I have a bit of a southern sweet tooth! These days its not an every night affair but I do tend to make a dessert that feels special once or twice a week, and always for company. You can then imagine my delight when I discovered that this 5-minute strawberry shortcake dessert can be assembled quickly but taste like it took a ton of time to prepare.

Easy Strawberry Shortcake

Here’s the skinny. Well, er, not so skinny but it has strawberries which makes it feel like a lighter dessert! The last time I found myself in Trader Joe’s I ended up with a lot of fun things in my cart. It happens to me a few times a year. I go in there for just one or two things and come out with a cart full of items I just can’t wait to try. Last week, poor Max was in his car seat in the cart literally surrounded by fun foods! Luckily when you shop at 10 am with a baby there are plenty of sweet elderly ladies to coo at them while you examine the goods down each aisle while also simultaneously talking to your best friend on the phone. (Thanks ladies, Max loves you too!)

Strawberry Shortcake Ingredients

One item I casually tossed into the cart was their Shortcake Biscuits. Um yes please. Later that day, I simply washed and cut up a bowl of strawberries and then tossed them with a teaspoon or so of sugar and allowed them to sit for a while. Next I halved one of the biscuits and then divided the strawberries among them. Finally I topped with a healthy (that’s the southern way of saying massive pile) of whipped cream and added a slice of strawberry on top for garnish.
