Roasted Shrimp Three Ways

I really love shrimp, cooking and eating it!  It’s so versatile.  The newest way I prepare it is to roast the shrimp and you can find so many options for it’s use that way.  It’s so easy. Just season with salt and pepper and douse with a good amount of olive oil, spread evenly in one layer on a baking sheet and roast in a 425 oven for about 5 minutes – until they turn pink and start to curl.  Then drizzle with fresh lemon, add some fresh herbs, and toss.  So yummy!!

I picked up a couple pounds of these babies the other day at the market, roasted them and used them in a variety of dishes this weekend.  They make the absolute perfect app, leaving just the tails on for easy dipping in a simple sauce.

1. 1000 Island Dipping Sauce
I like to shake it up a bit and not always go with the traditional cocktail sauce.  Lately, I’ve discovered I can doctor a prepared 1000 Island Dressing with some horseradish, fresh lemon juice, salt and pepper and a dash of hot sauce – oh my!!  It has been quite the hit!

2. Roasted shrimp salad
The next day I put together a beautiful green salad, with red and yellow peppers (on sale this time of year), some tomato and hard boiled egg, adding the shrimp and using the dipping sauce the night before as the perfect dressing.  A bit of seasoned sea salt and an additional squeeze of fresh lemon and it’s the perfect dish for these last days of hot weather!  Yummy, cool and healthy.  Can’t get any better than that.  And, quite pretty to look at, as well!  This would be perfect for inviting a few friends over for a nice lunch.  Add some fresh bread or fancy crackers, a glass of wine, and you have a party!!  Don’t you think?

3. Orzo and Roasted Shrimp
Shrimp and grits are always a fave, but I personally like to serve these beauties with orzo.  Trader Joe’s has a packaged orzo and rice pilaf that I decided to try.  The directions suggested toasting the mixture in a bit of butter and adding water and the seasoning packet.  I opted to use a vegetable broth which I added some garlic cloves and white onion to, brought to a soft boil, and then added the toasted rice, orzo and seasoning.  Cooked down until broth had been absorbed and you can’t believe how good this is!

For dinner, served warm with the shrimp straight from the oven.  Or another cold luncheon option.  Both delicious!  The shrimp and orzo are equally good warm or cold, so you could serve them in such a variety of ways!! This is the perfect summer go to meal and will fare just as well as we start to welcome fall.  Pretty, simple and yummy!  All the ingredients for the perfect dish!!
