Simple Summer Guacamole
Nothing screams summer like a nice simple guacamole. It just makes for the perfect snack. Adding appropriate sides for dipping can be fun, as well. The choices are endless. There is always, of course, the most common choice of tortilla chips, but I like to mix it up a bit. Happy Hour last Friday provided the perfect opportunity to serve this special goodness and I chose to add some pretty red peppers, celery, root chips and crispy pita chips to accompany my simple summer guacamole. Quite lovely and scrumptious!!
Keeping it simple, I served refreshing vodka and lemoncello drinks garnished with fresh lemons. Such a nice alternative to the typical margarita we normally associate with guac. The root chips and veggies also kept it light and healthy, a plus for these warmer evenings. We enjoyed cocktails and apps without feeling too full and guilty. What better way to the start the weekend!!
The Recipe for this Simple Summer Guacamole
Ingredients:
2 Avocados
1/2 Lemon
1 small tomato
1 shallot or 1/4 red onion
Sea Salt and Pepper to taste
Dash of Hot Sauce
Jalapeno (optional)
Directions:
Cube avocados, (I like my guac chunkier) and tomatoes. Squeeze fresh lemon over both and finely chop the shallot or red onion. Using the shallot gives a slightly more subtle onion taste than the when using the more pungent red onion. Either work and both are delicious. Add the shallot/onion to the avocado and tomato along with the sea salt, pepper and hot sauce to taste. For an extra bite and certainly more to my taste, add a bit of chopped jalapeno, as well. Removing the seeds keeps the bite fairly harmless, unless of course you want that heat!
So simple, but so yummy! Hope you make simple summer guacamole a big part of your summer fun! I sure will!
