This red, white and blue fruit parfait is a fun and festive way to kick off your Olympic trials watching and it’s perfect for the Fourth of July of course too!

I am a huge fan of the Olympics. I just love watching and rooting for all of the young athletes who have sacrificed so much to reach their dreams. The track and field trials are happening right now and I can’t get enough of watching those talented athletes compete!

This time it is especially sweet to watch becauses we were without sports for so long! Now while I love the winter Olympics, there is something so great about whipping up a nice cold pitcher of strawberry lemonade and watching from our porch. Viva la summer!

Don’t get me wrong, I will definitely be watching our favorite athletes hit the snow and ice when it’s time, but for now, I am reveling in the summer races! And it’s so neat to see how my kids also get really excited whenever I’m really excited about something. It’s such a sweet quality that children have.

That makes it really fun to go a little over the top with celebrating the holidays and special occasions like the Olympics. I won’t have this time with them forever so making it special is worth it. This red, white and blue fruit parfait is a healthy way we can start off cheering on our favorite Olympians!

Red, White and Blue Parfait Recipe

Ingredients: Blueberries, cut strawberries, vanilla greek yogurt, granola and honey.

Directions:

  1. Layer your parfait with strawberries on the bottom, white yogurt and blueberries for a “red, white and blue” layered look.
  2. Next add a layer of granola and drizzle it with honey.
  3. Repeat with another “red, white and blue” layer.
  4. Garnish with a strawberry and serve!

How cute and easy is that? And as you can see the little ones couldn’t keep their hands off of them! My nephews never met a dessert they didn’t like either. Haha! And what’s great about this recipe is it can double as breakfast!

We are big breakfast eaters in our house but this one got a repeat request the next morning and I was happy to oblige. I’m all about a breakfast of champions!

In addition to breakfast, we plan on making fun paper Olympic torches and our own basement obstacle course. Nothing like getting creative to help keep us busy and entertained all summer long.
