Let’s get real here. Being new to the whole harried Mom thing and needing to lose some baby weight, if I am ever going to fit into my jeans again, I’m making a solid effort to create dinners that are both fast and healthy. I love taking the time to assemble decadent dinners, but it looks as though those days are over, at least during the week. Quick and easy it is! In fact it’s taken me about 6 different attempts to sit down and write this post! Each time I get 2 minutes in, a diaper needs changed or Meatball decides to dump over a glass of water in a desperate maneuver for attention, etc. (Meatball is a cat for those of you new here).
So, last week when this Chicken with Pepperoni-Marinara Sauce recipe in Cooking Light magazine caught my eye, I went for it. True to its word, this recipe was quick to make which I loved. Plus, I had so many of the ingredients on hand, always a bonus. It is basically a lighter version of a more traditional Chicken Parmesan, so it has a comfy feeling to it. Of course, I was tempted to serve with a heaping side of pasta, but instead opted for a nice green salad. All around it was a winner!
So, how about it? Any light and quick recipes to share? I need ideas peeps!
