With the long weekend and summertime coming up, you know there’s bound to be barbecues and cookouts galore. When I host a cookout, one of my must-haves is my no fail guacamole… What can I say, I’m a guac-aholic.
Over the years I’ve perfected my guac recipe with a few unexpected ingredients that make the guacamole really flavorful and fresh. I promise it will be the hit of your summer parties. Paired with salty tortilla chips, the only thing missing from this delish dip is a margarita!
No Fail Guacamole Recipe: Serves 6-8 depending on your guests’ love of guacamole! Keep in mind, you can increase this recipe by adding more avocados and spices to taste. This is not an exact science, keep adding until you are satisfied with the taste!
2 large ripe avocados
Diced Tomatoes(about 1/4 a cup)
Diced Onions (about 1/4 a cup)
Several dashes of hot sauce (or more, depending on how spicy you like it)
Large pinch of cumin for a smoky flavor
Salt and pepper to taste
Tablespoon or more of coarsely chopped cilantro
Juice from 2 limes
First off you’ve got to find the perfect avocados. If you are shopping the same day you are making your guac, you want your avocado to be pretty soft to the touch. Your friendly produce department can help you if you’re unsure about ripeness.
Cut the avocado lengthwise and split into 2 halves, saving the pit. Score the avocado halves lengthwise and widthwise and cut into coarse cubes, it doesn’t have to be perfect. Combine the avocado with the other ingredients.
Next up: Mash it up! You know that potato masher you bought once and never used? I use it for mashing up guac! Gently mash up your ingredients; the coarserand chunkier the better in my opinion.
Finally, keep adding lime juice, salt, pepper and hot sauce a little at a time and mix in with a fork until the taste is just right. To keep the guacamole fresh, stick the avocado pit right in the middle of it and squeeze some lime juice on top of it. It will stay fresh and not turn brown for a few hours in the fridge.
