Watermelon Vodka Cocktail

At the height of summer, my household is all about the watermelon! Actually, we start noshing on it as soon as it’s seasonally available. We may have just served up some slices at a barbecue the other day. Haha! Our entire family loves that sweet juicy stuff and my kiddo was actually the watermelon eating champ at a party this past weekend. He consumed 9 slices all by himself! When summer hits and it’s hot and humid, I’m fully supportive of his hydration methods beyond the traditional glass of water. And speaking of drinks…
Let’s talk about adult beverages for a moment. Haha! Our Watermelon Vodka Cocktail is another great way to serve up a fun drink for guests or use up the leftovers from any oversized melons you have on hand. This drink is refreshing, slightly sweet and surprisingly light. You know how important that is the further we get into the warm weather months. I don’t want to eat OR drink anything that feels heavy!
And apart from it tasting great, this cocktail has the ability to virtually transport me to a tropical location instantly. I literally take a sip of my Watermelon Vodka Cocktail and picture myself poolside in a caftan browsing through a stack of glossies. Ok, the reality may look WAY different during a family filled spring break or in the summertime. Insert two wild kiddos, pool toys and squealing, but I still enjoy the mental vacay. Please don’t ruin that for me, ha! I bet you could use one too. Just sayin’.
Watermelon Vodka Cocktail Recipe
Ingredients
Serves 3-4
4 cups of fresh watermelon chunks
1 tbsp. lime juice (while fresh is best, I used bottled and it was great!)
1 1/2 tbsp. honey
3/4 cup water
1/4 cup vodka
Directions:
1. In a blender, combine the watermelon, lime juice, honey and water. Blend well.
2. Using a fine mesh strainer (like this one), pour the liquid through letting the seeds and pulp catch and set aside.
3. Add the vodka to the liquid and stir.
4. Serve over crushed ice. A nice small slice of watermelon and a mint leaf make cute garnishes!
This Watermelon Cocktail is super simple to make. Plus, you can make an even larger batch based on how much watermelon you have handy. I just love it when a summer cocktail uses ingredients I’ve already stocked up on, don’t you? Aside from the watermelon, I always have a bottle of lime juice in the refrigerator and honey in the pantry so this cocktail is a huge win in my book! Easy peasy is my jam. I think all us busy moms would say the same right?
Also, if you want to make a batch without vodka my 4-year-old loved the non-alcoholic version too! Enjoy! Oh and you can even add a seasonal spin this drink to give it some life after summer. I’m a big fan of freezing green grapes and floating them like “eyeballs.” Hello Halloween watermelon vodka cocktail!

YUM YUM YUM!! I love making watermelon cocktails! I made a super delish watermelon mojito a few weeks ago. It was literally amazing.
Perhaps a little more lime and a little less water, but great as is. Very light and refreshing.
Can I make this a day or two ahead?
I haven’t tried to make it a day ahead but since watermelon that has a tendency to break down I would think only a few hours ahead would taste best. Let us know if you try and find out otherwise, thanks!

What flavour of vodka would you recommend or just use none flavour?
I think the watermelon provides plenty of flavor, so plain vodka works great!
Leave out the water- watermelon has enough on its own, adding just watered down the flavor
