When Sunday night rolls around, do you find yourself stressing about the week ahead? Well, get ready for that trepidation to go away thanks to our easy Sunday night pot roast recipe!  That’s right. Making dinner is one thing us busy moms definitely don’t need to be worrying about the night before school starts up again. Sunday night gets such a bad rap, but it doesn’t need to.

The kids work so hard during the school week, as do us moms and dads. Don’t you want to be present and enjoy your time with those little ones? I know I do! Spending hours in the kitchen simply does not fit into my weekend plans. I can think of plenty of other things I’d rather be doing. Can’t you?

That being said, while Saturday is typically our day to eat out, we’re too busy on Sunday nights. There are clothes to be laid out, lunches to pack, projects to be done…I could go on and on. I’m sure you could too. We all know the drill. So, while I need to make Sunday night dinner, I also need it to require little effort. Enter the slow cooker.

My hubs, who does the bulk of our cooking, has been singing its praises for ages. I’m sure most of you are familiar with the crockpot’s merits as well. Well, this girl loves it now too. The ease of use is second to none. I’m a busy mom who doesn’t have time to spare. That’s why our easy Sunday night pot roast recipe will be making more than one appearance on our table this winter! It’s actually my mom’s recipe, so you know it’s good. Well, maybe you don’t know it’s good because you don’t know my mom in real life.

Trust me when I say she is an an incredible cook. And bless her heart, she’s always trying to pass her prowess in the kitchen down to me. Bwah! I’m trying to like being in the kitchen, really I am. I mean I love to bake. That counts for something right? Maybe not. Haha! Being that cookies aren’t going to help my children grow, I need to like making actual meals more. The slow cooker is helping.

It amazes me how you can just throw a bunch of ingredients into one, set it and walk away for a few hours. Then, come evening, you have the most delicious dish to serve to your family. And you didn’t have to spend hours at the stove. I’d call that a WIN for you fellow moms who don’t love kitchen duties, but I digress…

Now that you know why I love this easy Sunday night pot roast recipe, let’s talk about how to make it! Firs off, let’s revisit why the slow cooker is your best friend. Can you make this recipe ahead of time? You sure can. That’s the beauty of the slow cooker right? You can make it hours before you need it. And as long as you have a crockpot big enough, you will have leftovers.

If I have one piece of solid mom advice, I would say it’s embrace the leftovers. You can try to incorporate them in a slightly different way the next day. Or if you really don’t want to eat your pot roast for dinner again, take it to work for lunch. My hubs loves nothing more than heating up something delicious from the night before for his lunch! Easy Pot Roast Recipe

Ingredients:

1 chuck roast
4 large carrots
4 large potatoes
1 large onion
can of mushroom soup
envelope of French Onion Soup mix
salt and pepper to taste
flour for dusting

How to Make a Slow Cooker Pot Roast

Directions:

1. Salt, pepper and dust the roast with flour.
2. Brown on the stove top in several tablespoons of olive oil.
3. Add browned roast, soup mix, canned soup and onions to slow cooker.
4. Cook on low for 6 hours.
5. Cut the vegetables in large chunks.
6. Add the carrots and potatoes to the slow cooker for the last 2 hours.

As you can see, this easy Sunday night pot roast recipe isn’t rocket science. If you were to ask me how to make an easy pot roast, I would say it really is all in the name! It’s EASY. You just need to fit a few minutes of prep time into your afternoon. By dinner time, all you’ll have on your plate is the option to whip up a simple salad or dessert to go with it.
