Girls Night In, California Style

California Dinner

I love spending quality time with my girls. For as long as I can remember, Sunday night has been a great night to make dinner, swap stories and watch TV together. Before kids came along, we would get together to chat about the latest drama and what had happened over the weekend. It was such a great end to the weekend. Now that kids and family life are in the picture, it’s still a great time to get together and relax, only now it’s less about the drama of going out and more about the drama of pre-school. Ha!

California Themed Dinner

I always think its fun to get friends together and play off a theme. And Sunday night reality shows like the new Stewarts and Hamiltons on E! is perfect for really having fun with it. Why not a California themed girls night in? I love California cuisine from fish tacos to avocado on everything! One of my favorites is sushi. Now I know that sushi is not from California, but did you know that legend has it that it was a group of traveling Californians who put the rice on the outside of the roll for taste and texture? Also, the California roll originated in SoCal and the state loved sushi so much it helped spread the love across the U.S. I may be an East Coast girl at heart, but that is something I can totally get behind!

And what better way to soak up the sunny personalities of quirky California families than pairing our sushi with Mai Tais? Yum! The fruity cocktail is claimed to be invented in the 90s in Oakland, California. There are several delicious variations and I included an easy recipe below.

California Mai Tai (Serves 1)

1.5 ounce spiced rum
1.5 ounce coconut-flavored rum
1 tsp grenadine syrup
3 ounces pineapple juice
2 ounces orange juice

Directions: In a cocktail mixer full of ice, combine the spiced rum, coconut rum, grenadine, pineapple juice and orange juice. Shake vigorously and strain into glass full of ice. Garnish with pineapple for fun!
