Peanut Butter Jelly Oatmeal Balls, No-Bake

Kristin and I both have kids that we struggle to get to eat. Every mom seems to have a hard time around food in general. Whether its looking for healthy food options, food allergies, or just struggling with variety in general, food definitely seems to be a main topic of conversation among all my mama friends. It’s hard being responsible for how someone else eats. And its unusual and kind of lucky that we both seem to have the same problem. Jake just doesn’t want to stop to take the time to eat. He will play outside for hours while hungry until he literally just melts down.

Just like moms of kids with food allergies scour sites looking for recipes that will work, we often call each other with ideas for our guys to try. So when I discovered and then altered these Peanut Butter Jelly Oatmeal balls I instantly called her. This snack was well received (as in he ate it, score!), easy to make, and portable meaning Jake could eat it on the go. (Again we are fortunate not to have the peanut allergy be an issue with this recipe!)

I also found myself nibbling on these Peanut Butter Jelly Oatmeal Balls and they made a great on-to-go breakfast with my coffee. Throw in a podcast and you are basically reliving my commute into DC three times a week, ha.

Peanut Butter Jelly Oatmeal Balls

Peanut Butter Jelly Oatmeal Balls

Serves: Approximately 16 balls about an inch or so wide.

1/2 cup Peanut Butter
1 1/2 cup Old Fashioned Rolled Oats
1/3 cup Jelly


Mix all of the ingredients into a bowl and stir thoroughly. Cover and chill in the refrigerator for about 30 minutes.

Once chilled, using a full spoon amount, roll into a ball with the palm of your hands. Repeat until done. Eat immediately or store in a container in the refrigerator.

Just look at that smiling face! My next take on Peanut Butter Jelly Oatmeal Balls will be to add some mini m&m’s once the newness of these wear off, or you could add dried fruit, chocolate chips, coconut. So many possibilities to change these up and get a good protein punch. Yum!
