So, we’ve tackled style challenges. We’ve even done a DIY challenge. What we haven’t done yet around here is a cocktail challenge.. I think it’s about time…Don’t you? Warmer weather is headed our way and I don’t know about you, but warm weather always makes me want a tropical drink! So, get ready. It’s time for our spring cocktails challenge!
Head on over to Krystal’s Kitsch to get the details on her delicious concoction…And now for my drink. The presentation isn’t nearly as pretty as Krystal’s because mama duties got in the way of my photo shoot plans, but it doesn’t make the drink any less tasty.
I decided to do a tropical take on a Bellini and made a Frozen Champagne Cocktail. Instead of peach juice, I pureed frozen mangoes and they blended with my budget friendly sparkling wine beautifully. On a side note, how funny is it that we both used mangoes? That was totally unplanned, but I digress…
Ingredients: 1 bottle of sparkling wine, 1 bag of frozen mangoes, raspberries for garnishing
Step 1: Puree the frozen mangoes.
Step 2. Pour about 2 oz. of the puree into your flute.
Step 3. Pour your champagne or sparkling wine over the mango puree and stir. (If you don’t stir it, the bubbly sits on top of the puree and it’s not exactly pretty.)
Step 4: Add a raspberry or two for a garnish if you so desire.
