On one of our many bestie getaways, Kristin and I visited Phoenix, Arizona together and while there we went to dinner with friends at a super fun restaurant called Diego Pops. We, of course, had to test out a slew of different flavored margaritas and, not surprisingly, loved them all! One flavor I especially enjoyed was a cucumber margarita. It was really mild and not as sweet as a typical margarita. So, when I got home I decided I just HAD to try my hand at making a few margarita recipes on my own and the watermelon cucumber margarita I’m sharing today was the clear winner. This Watermelon Cucumber Margarita is perfect for any warm spring or summer day when you simply want to cool down and sip on an ice cold beverage. It’s also perfect for Cinco de Mayo, which will be headed our way very soon. Everyone is eager to sip on a marg and nosh on chips and salsa on May 5th. Am I right? To be fair, that pretty much describes every day for me. Bwah! And the cucumber in this margarita recipe leaves you feeling very refreshed and light. It’s almost spa-like, if spas served margs. I mean I would certainly pay a visit to one that did. Who’s with me? Haha! I’m ready to book my appointment!

Now, initially, I wasn’t sure if this would be a salt or sugar rimmed glass type of margarita, but, after making this batch, I think the next time I whip these delectable drinks up, I will rim the glasses with some fun pink or even green sugar. Also, another helpful tip is to make sure your watermelon is fresh and sweet! Your watermelon cucumber margarita will taste all the better if it is. Watermelon Cucumber Margarita

Print

This refreshing watermelon cucumber margarita is the perfect drink to sip on a hot summer day or serve at a summer party!

Ingredients

• 2 cups of watermelon chunks (make sure to use fresh, sweet watermelon)
• One cucumber peeled and diced into rough chunks with a few thin slices left aside to use for garnish
• 3 ounces tequila

Instructions

1. Combine watermelon and diced cucumber in blender and puree until smooth.
2. Using a sieve or other mesh strainer over a bowl, pour puree and let the juice run through. Use a spoon or spatula to get the most juice possible.
3. Poor 1.5 ounces of tequila into each sugared glass with ice. Pour juice up to the rim and gently stir.
4. Add a few cucumber slices for garnish.
5. Sit back, sip and enjoy!
