Pumpkin Recipe: Minions Cupcakes

Now that October is flitting away and November is nearly here, I can’t get enough of the pumpkin recipes! And pumpkin cupcakes are on the top of the list. I’ve been having some fun experimenting with different styles and these Minions cupcakes might just take the cake! Pun intended. Bwah! I couldn’t help myself. I’ve been fully immersed in a Hallmark movie marathon. That kinda wholesome fun is just what this mama needs right now. Don’t get my wrong, I’m typically pretty saucy, but I have a sweet side too. Haha!

And that sweet side is happy to serve up my kiddos’ favorite little fellas in cupcakes form. I know it’s been a while since a Minions movie came out, but my family is still on board the Minions train. We rewatch all the Despicable Me movies constantly. They really never get old! In fact, if you feel like a little family movie night sesh yourself, these Minions desserts would be just perfect to serve at it!

I know we aren’t the only mamas with little Minions fans at home, so I know you are going to love our latest recipe post…And even if you don’t have Minions fever, who can resist pumpkin anything this time of year? Not this girl! These Pumpkin Minions Cupcakes are sure to please your entire family…grownups and kiddos alike!

Fun Minions Desserts

Ingredients

Dry:

1 3/4 Cup of All-Purpose Flour, sifted
1/2 Cup Light Brown Sugar, packed
3/4 Cup Granulated Sugar
1 Teaspoon Baking Soda
3/4 Teaspoon Kosher Salt
1/4 Teaspoon Ground Cloves
2 Teaspoons Ground Cinnamon
1/4 Teaspoon Ground Nutmeg

Wet:

2 Eggs, room temperature
1 1/2 Cup Pumpkin Puree
1/2 Teaspoon Pumpkin Oil
1/2 melted Cup Coconut Oil at room temperature
1/4 Orange Juice

How to Make Minions Cupcakes

Directions:

1. Preheat your oven to 350F degrees.
2. Butter the muffin pan with a baker’s brush.
3. Mix all the dry ingredients and whisk them together in a large bowl.
4. Add the pumpkin puree to your stand mixer bowl.
5.  Put in each eggs, one at a time. Make sure the egg is fully immersed before you add the next one.
6. Add the pumpkin oil, melted coconut oil and orange juice.
7. Set your stand mixer on low and add the flour mixture a little bit at a time until it’s incorporated.

8. Remove bowl from stand mixer and use a rubber spatula to scrape down the sides. Don’t over mix.
9. Pour the batter in the buttered muffin pan.
10. Bake for 15- 20 minutes.
11. Insert a toothpick in the center of a muffin to see if they’re done. If it’s clean when you remove it, the muffins are ready.
13. Allow the cupcakes to cool before assembling the Minions.

This Minions cupcakes recipe is so fun and tasty! Plus, the pumpkin flavor, makes it a perfect fall dessert!

Total Time 35 minutes
